Instructions
1. Preheat the oven to 375°F (190°C). Cook pasta in salted boiling water until al dente (about 7-8 mins), drain, and set aside. 2. In a large skillet over medium-high heat, cook ground beef with diced onion until browned and crumbly (5-7 mins). Drain excess fat if needed. Add minced garlic, onion powder, paprika, chili powder, salt, and pepper—stir 1 min until fragrant. 3. Stir in diced tomatoes (with juice) and tomato soup. Bring to a simmer for 2-3 mins to thicken slightly. Taste and adjust seasoning. 4. In a large bowl or the skillet (if oven-safe), combine cooked pasta with the beef mixture. Fold in 1 cup shredded cheddar until melty. 5. Transfer to a greased 9x13 baking dish. Top with remaining 1 cup (or more!) cheddar cheese. Bake for 15-20 mins until the cheese is bubbly and golden. For extra crisp, broil 1-2 mins at the end. 6. Let rest for 5 mins. Garnish with chopped green onions, pickles, or bacon. Enjoy!
